Vacation:

Have a blessed day!

Simple:

Hi,

Thank you for reaching out. I will be out of the office from ____ to ___ and will return on ____. I will respond once I am back in the office. 

Holiday:

Hi,

Thank you for reaching out. We are taking some time off to be with our family during this season. We will be out of the office from ____ to ____ and will return to normal working hours on ____. I will respond when I am back in the office. Now, go enjoy some much needed time with your family too!
